Coffee in the truck, boat at the dock, out the pass before the sun’s up. This is the day you booked the trip for.
FRIDAY, ALL MORNING
Bottom fishing, then whatever’s running
Reefs first, then the captain decides. The mate cleans and bags everything on the ride in — that part’s included.
FRIDAY EVENING
Somebody else cooks it
Carry the bag down the boardwalk and let a harbor kitchen handle it, or bring it home and put it on ice for tomorrow.

SATURDAY, ALL DAY
The slow one
Sleep in. Walk down to an empty beach. Half the group takes a four-hour bay trip out of Santa Rosa Beach; the other half doesn’t move.

Fish fry on the porch
Yesterday’s catch, a chef in the kitchen or a fryer on the deck, and the whole crew at one table. This is the night people remember.
